No-Bake Leprechaun Treats

March is here! I am definitely ready and hoping for some increase in temperature and better weather! St. Patrick's Day is upon us as we speak, so enjoy this month's recipe of course based around this holiday. We have some extremely kid-friendly no-bake treats using Lucky Charms cereal!
Tools Needed:
9x13" baking dish
Cooking spray
Large saucepan or pot
Measuring cups and spoons
Wooden spoon or spatula
Ingredients:
6 Tablespoons butter
1 10 ounce bag mini marshmallows
6 cups Lucky Charms cereal
1 teaspoon vanilla
1 cup colored mini marshmallows
Green food coloring
Green or St. Patrick's Day sprinkles, optional
Spray the baking dish with cooking spray. Set it aside.
In a large pot, melt the butter over medium heat.
Reduce the heat to low and add in the entire bag of mini marshmallows. Stir.
Add the green food coloring until desired shade of green is achieved. Tip: I used a dropped food dye (vs. the gel dyes), and I used about 20 drops.
Stir until combined and marshmallows are melted. Remove from the heat.
Add in the vanilla and stir. Add the Lucky Charms cereal and stir to combine completely.
Add in half the colored marshmallows and stir gently.
Pour the mixture into the prepared baking dish. Press down evenly into dish. Tip: to avoid the mixture sticking to your fingers or utensil, spray them with cooking spray!
Top with the remaining colored marshmallows and sprinkles, if using.
Allow to cool and set for approximately one hour, then cut into pieces.

NOTES:
Feel free to add in other goodies if you so choose.
If you need these to set quickly, you can freeze them for about 10 minutes and they will firm up enough to be able to cut.
These will keep in an airtight container at room temperature for up to three days.
