Welcome to Ms. Nicolette's Pantry! So happy to have you here and in the kitchen with your kiddo adding something new to your lifestyle.
I have hand-picked recipes and activities that are easy for you to create at home with the help of your children. Based on their age you can decide which tasks they can help you with, and which ones they should let an adult do. Make this a learning experience for you both - let your child explore the baking/cooking process and explain each item, ingredient, and step to them, and watch how your child interacts!
This month I have selected a tried and true recipe - bread pudding. This is another fun and simple recipe to add to the collection. Bread pudding is a personal favorite of mine - if you've never had it, be SURE to try this one! It is super easy and absolutely foolproof.
Tools Needed:
Cutting Board
Serrated bread knife
9x13 baking pan
Large mixing bowl
Whisk
Spatula
Small saucepan
Ingredients Needed:
PUDDING
1 loaf bread - preferably challah or brioche bread
5 large eggs
3 cups caramel macchiato coffee creamer
1/2 teaspoon cinnamon
Cinnamon sugar, optional
CARAMEL DRIZZLE - or 1 jar store-bought caramel sauce
6 Tablespoons butter
1/2 cup light brown sugar
2 Tablespoons cup milk
1/2 teaspoon vanilla extract
Instructions:
Preheat oven to 350° Fahrenheit. Spray your 9x13 baking dish with cooking spray. Tip: if you feel comfortable, teach your child how to preheat the oven - but also explain to them that ovens and stovetops get very hot and to only do this with the help of an adult!
Using cutting board and serrated bread knife, cut the loaf of bread into 1 inch pieces.
In mixing bowl, whisk together coffee creamer, eggs, and cinnamon. Tip: let your kids crack the eggs! They love this step. Just be sure to crack eggs into a different bowl in case of any egg shells.
Add the bread cubes to mixture and gently stir to coat completely.
Pour the entire mixture into the prepared pan and use the spatula to scrape any remaining into the pan. Tip: during this step, when it comes time to scrape out the bowl, show your child how and then hold the bowl for them while they finish the task.
Use the spatula to spread into all corners of the pan, ensuring it is even.
If desired, sprinkle the top with cinnamon sugar. Tip: some people keep cinnamon sugar on hand, but if you don’t, simply combine 1/4 cup sugar and 1 Tablespoon cinnamon. Show your kids how to sprinkle it on top!
Cover with aluminum foil.
Bake for 45 minutes, remove from oven, remove the foil, and bake for an additional 10-15 minutes until set. Tip: using caution to check when done, take a sharp knife and make a small insert into the middle. If the knife comes out clean, it is done! Considering it is fresh out of the oven, kiddos should just watch this step!
While baking, if you are making your caramel sauce from scratch, prep the ingredients. Start by melting the butter over low heat in a saucepan.
Add brown sugar and milk, whisk until combined.
Bring to a boil over low heat, stirring constantly until caramel begins to thicken.
Remove from heat and add vanilla. Stir.
Drizzle the caramel over the top of the bread pudding. Enjoy as is or with a scoop of vanilla ice cream!
NOTES:
Practically any other type/loaf of bread can be used for this recipe, I just recommend using challah or brioche breads because they are rich breads.
If you have the extra time, after cutting the bread into pieces, allow to dry slightly, either on a baking sheet, or on the cutting board you already used. This will allow the bread to soak up the mixture even better.
Make sure children are washing hands before and after, especially after handling certain things like raw eggs.
Have FUN and ENJOY!
