Apple Fritter Bites

I have hand-picked recipes and activities that are easy for you to create at home with the help of your children. Based on their age you can decide which tasks they can help you with, and which ones they should let an adult do. Make this a learning experience for you both - let your child explore the baking/cooking process and explain each item, ingredient, and step to them, and watch how your child interacts!


For the month of November, I was searching up fun fall-themed recipes, and this one popped up! Its one I had never tried before... until I baked some up! They are delicious, little, apple-filled bites with a sweet apple-cider glaze. These are perfect for you and your kiddos for snacking, an after-dinner treat, or even for breakfast! I would compare them to an apple cake bite. Check it out below!


Tools Needed:

Sheet pan

Large mixing bowl

Whisk

Spatula

Measuring cups and spoons

Cutting board

Knife

Small cookie scoop or tablespoon

Pastry brush

Cooling rack


Ingredients Needed:

BATTER:

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

2 teaspoons cinnamon

1/4 cup unsalted butter, melted

1/4 cup granulated sugar

1 large egg

1/2 teaspoon vanilla extract

1/2 cup unsweetened applesauce

1 1/2 cups honeycrisp or gala apples (about 2 apples)

GLAZE:

2 cups powdered sugar

1/3 cup + 2 Tablespoons apple cider or apple juice


Instructions:

  1. Preheat oven to 400° Fahrenheit. Spray a sheet pan with cooking spray. Tip: if you feel comfortable, teach your child how to preheat the oven - but also explain to them that ovens and stovetops get very hot and to only do this with the help of an adult!

  2. In a large mixing bowl, whisk the melted better and sugar until combined.

  3. Add the egg, vanilla, and applesauce, whisk until smooth. Tip: let your kids crack the eggs! They love this step. Just be sure to crack eggs into a different bowl in case of any egg shells.

  4. Add the flour, baking powder, salt, and cinnamon. Stir with spatula until just combined. Tip: don't overmix the batter once the dry ingredients are added. A few lumps are okay!

  5. Dice the apples finely. Gently fold the apples into the batter. Tip: be sure to dice up the apples quite fine. This will ensure they will bake through and ensure each bite is full of apple pieces!

  6. Use cookie scoop or spoon to scoop 1 Tablespoon portions of batter. Drop a few inches apart on prepared sheet pan.

  7. Bake for 10 minutes.

  8. Remove from oven and turn on oven broiler to high.

  9. To make the glaze, whisk together the powdered sugar and apple cider/juice until thin and pourable. Tip: if your glaze does not seem thin enough, add more cider/juice to thin it out.

  10. Brush some of the glaze over the warm fritter bites, letting it drip down. Broil for 2-4 minutes, until the glaze begins to bubble.

  11. Remove from oven and brush the remaining glaze evenly over the tops of the fritters.

  12. Let sit for 15 minutes to allow the glaze to set.

  13. Enjoy!



NOTES:

  • It isn't super necessary to peel the apples, it just depends on your preference! Personally, I peeled my apples when I made these. If not, just make sure they are diced super fine!

  • For a fun twist, try dipping them in salted caramel, maple, chocolate sauce, or over a scoop of vanilla ice cream.

  • Make sure children are washing hands before and after, especially after handling certain things like raw eggs.
